Between these cities, driven by the Atlantic Ocean and the rivers Guadalquivir and Guadalete, extends the care vineyard, on undulating terrain of white limestone marl; they are the famous albarizas, spongy land and very deep, with excellent water-holding capacity and excellent physical condition for the development of quality vineyards. The southern climate is compensated for by the Atlantic and provides summers and mild winters, with a high humidity by the proximity of the sea, substantial annual rainfall, along with an elevated insolation.

Tasting notes:

Fine: Wine straw yellow to a pale gold colour, with aroma and flavor of the ageing. Its special features are the result that has been developed all of its ageing process under the veil of flor.

Amontillado: Amber more or less intense, aroma and flavor, as a consequence of its particular ageing process, which includes a first phase of biological ageing, followed by a phase of oxidative aging wine.

Oloroso: It came deep amber to mahogany, characteristic flavour and aroma very charged, as a result of its oxidative ageing process.

Palo cortado: wine of amber to mahogany, characteristic aroma with notes that remind the Amontillado, but on the palate it presents characteristics similar to Oloroso, as a consequence of their process of oxidative aging, after the disappearance of the initial flower layer.

Dry: It came from pale yellow to gold, with aromas of the biological ageing process under the flower veil  and slightly sweet flavor.

Pale Cream: It came from straw-yellow to pale gold, with aromas of the biological ageing process under the flower veiland sweet flavor.

Medium: It came from amber to mahogany, which combine the own of the ageing and oxidative aging and sweet taste-scented.

Cream: It came deep amber to mahogany, with deep aroma of oxidative aging and sweet taste.

Moscatel: A wine made in at least 85% from grapes very ripe or sunny must Moscatel, whose fermentation is stopped by the addition of wine alcohol. Golden amber to mahogany more or less intense and even ebony and dense aspect; with aromatic notes of raisins, very sweet and unctuous on the palate.

Pedro Ximénez: Wine made at least by 85% grape must from grapes very ripe or sunny Pedro Ximénez, whose fermentation is stopped by the addition of wine alcohol.
